Fruit doesn't wait.
Neither should you.

Every variety ripens once. The buyers who understand the calendar — who reserve in January for August fruit — are the ones who get the allocation. Scroll through the year.

JAN–FEB · Dormancy & Pruning

The grove rests. We prepare.

Ancient trees stand bare along the stone walls. Every branch is studied, the previous season's wood removed by hand. This is where next year's fruit begins — in the decision about which wood to keep.

  • Pruning complete: Brown Turkey
  • Kadota
  • Black Mission

MAR–APR · Bud Break

The first green push.

Buds swell and break open over two weeks. Each node reveals whether the wood is productive. The grove becomes a daily conversation between the grower and the tree.

  • Breba crop setting: Black Mission
  • Celeste
  • Osborn Prolific

Variety allocation confirmed — no substitutions after April 30

MAY–JUN · Breba Crop

First fruit. Premium window.

The breba — figs that overwinter as embryos on last year's wood — ripen early. Smaller, more intensely flavored. The rarest allocation of the year. Most buyers miss it entirely.

  • Black Mission breba
  • Osborn Prolific
  • Celeste early

JUL–AUG · Main Harvest Peak

The obsession made visible.

Every day of the year leads here. Trees heavy with fruit. Pickers move at 5am to beat the heat. The skin splits when you press it — that's the signal. Brix climbs to 22° in the Black Mission. This is what we grew for.

  • Brown Turkey
  • Kadota
  • Adriatic
  • Calimyrna

Yield / acre600–900 lbs/acre

SEP–OCT · Late Season

Slower. Sweeter. Fewer.

Temperatures drop. The fruit concentrates. Kadota turns golden-green and holds for preserving. Brown Turkey softens to a jam-like interior. Volume falls, but quality peaks for confiture and preserve production.

  • Kadota preserve-grade
  • Brown Turkey late
  • Tiger Fig

NOV · Last Harvest

Reserve next season now.

The final fruit leaves the grove before first frost. Preserve makers receive their last Kadota flats. And we begin the conversation about next year — allocations for the buyers who understood, early, that the best fruit is claimed before it exists.

  • Brown Turkey last
